International chefs share culinary techniques with campus dining teams

Chefs at UMass Boston Dining are expanding their culinary horizons this month as they welcome three international chefs from Chile, India, and Slovenia for training. 

The training sessions at UMass will culminate on February 3 when all three chefs serve their dishes in the food court with receptions later in the afternoon.  The event kicks off a multi-state tour to Sodexo dining teams in Massachusetts, Rhode Island, New Hampshire, New Jersey, New York, Vermont, and Pennsylvania during the month of February.

Chef Boris delivers authentic Chilean cuisine with a passion for food, service, and technique. In 2001, Chef Boris joined Sodexo Chile and has spent the past 13 years perfecting his craft. Currently, he showcases his talents as the Executive Chef at the Military Hospital of the Queen in Chile. Trained in molecular gastronomy food preparation, he is a trainer of gastronomic techniques as chef advisor at College Dunalastair Chicureo.

Chef Boris also showcases his talents in his role as chef consultant at College of the Teresianas and clinical advisor chef Las Lilas.

Hailing from India, Chef Navin is one of a rare breed of chefs who is completing a full circle of his culinary journey at a relatively young age. His repertoire and in-depth knowledge of Indian and regional cuisine have proven to be an overwhelming draw for individuals and organizations seeking a culinary talent to run their events.

In June of 2010, during the Tour de France, Chef Navin was appointed through Sodexo to cater to 250 Indian delegates in France. In 2007, Chef Navin was honored to be the Chef-In-Charge for the 50th Birthday Party for Mr. Mukesh Ambani, Chairman of Reliance Industries Limited, India’s second most valuable company.

Another feather in his chef’s hat was being requested to act as the Chef-In-Charge for the Young President of India (YPO) four-day event at JVSL (Jindal) Trangalu. He was also the Chef-In-Charge for the YPO Hosted by Mr. Mukesh Ambani at Jamnagar for Three Days 2008.

His primary areas of focus are training and development through the Culinary Training Programs at Sodexo University, trade evaluation, product trials and development, and operational support.

Specializing in the flavors of Slovenia, Chef Marin is a Head Chef for Sodexo Maribor. Chef Marin was born in Ptuj, a very small state in Brezovica, Slovenia. He attended and graduated college with a degree in hospitality and tourism in Maribor, Slovenia.

Chef Marin started his career as an assistant cook after graduating high school. He quickly moved through the ranks and within ten years obtained a position as Chef at Gostilna pri pošti, an upscale restaurant in Ptuj, Slovenia.

Chef Marin began his career with Sodexo over ten years ago, starting as a cook in 2003 at the Kuhinja Henkel Sodexo Maribor. After a short stint as cook Chef became the Executive Chef. Chef Mari is currently working as district manager at Restavracija Sodexo Slovenska Bistrica.
