Monica Glass, pastry chef at Clio and Uni Sashimi Bar, will compete in Cookie Creations

Monica Glass, pastry chef at Clio and Uni Sashimi Bar, will compete in Girl Scouts of Eastern Massachusetts’ Cookie Creations on Thursday, February 6 at the Royal Sonesta Hotel in Cambridge. Glass will compete against 13 top local chefs to create a unique dessert or appetizer using Girl Scout cookies as an ingredient.

Originally from West Chester, Pennsylvania, Glass’s first experiences in the kitchen were beside her mother and father. Her love of cooking continued into her college life at Pennsylvania State University, where she earned the nickname “Chef Moni.” After graduation Glass started a career in public relations in New York, but quickly learned she was far happier in front of an oven than behind a desk. She decided to pursue her love with an apprenticeship under the executive pastry chef at New York City’s Gotham Bar and Grill. Since then she has striven to learn from the best, working under Michael Laiskonis, the executive pastry chef at Le Barnardin, and as a pastry chef at the 10 Arts Bistro & Lounge at The Ritz Carlton Philadelphia.  In 2012, she took on her current role as pastry chef at Clio and Uni Sashimi Bar, where her creative take on traditional dishes sets her apart from the crowd and has helped her to thrive.  

Diagnosed with a gluten allergy, Glass has created a broad menu of gluten-free morsels in addition to her delectable wheat-inclusive creations.

Other chefs competing in Cookie Creations include: Susan Abbott, executive pastry chef, The Catered Affair; Danny Angelopolus, Henrietta’s Table, The Charles Hotel, Harvard Sq.; Danielle Buxton, general manager, A Day to Remember, LLC; Eunice Feller, co-owner and chef of Bread & Chocolate; Donald Hernstrom, head chef and ice cream creator at J.P. Licks; Katie Kimble, pastry chef, Area Four; Lauren Kroesser, executive pastry chef at Eastern Standard; Christina Mercado, restaurant manager and pastry chef at Finale, Harvard Sq.; Brian Mercury, executive pastry chef at Harvest; Jon Riley, executive chef at Capers Catering; Brian Dandro, executive chef at the Royal Sonesta Hotel; and chefs from Kings Bowl America and Shake Shack.
